Crab Apple Jelly
Crab apples are essentially the same as apples except that they are smaller tarter fruits. Exceptionally high pectin and acid content makes it them ideal for setting jelly. A slow simmer over several hours produces a fiery red tart juice that readily sets into a beautiful jelly.
Equally delicious on scones, toast or with roast pork this is special treat to have in your pantry.
