Crab apples are essentially the same as apples except that they are smaller tarter fruits. Exceptionally high pectin and acid content makes it them ideal for setting jelly. A slow simmer with fresh rosemary over several hours produces a fiery red tart juice that readily sets into a beautiful jelly with a savoury sweet taste.
